Mom’s Meatloaf

Sometimes comfort food is in order and is there anything more comforting than meatloaf? I don’t think so. This is my mother’s recipe and it is huge that I am sharing it with the world as it contains an unexpected ‘secret’ ingredient! 

My mom met my dad at college during second semester of their senior year. She made him this meatloaf on one of their early dates. It must have worked as they were engaged by April and married shortly after their graduations. They’ll be celebrating 50 years of marriage this June!

Mom’s Meatloaf:


1 1/2 lb. ground beef or meatloaf mixture

3/4 c. oatmeal

1 egg

1 large dill pickle, chopped (once secret ingredient!!!!)

8 oz. tomato sauce

1/2 c. chopped onion

1 tsp. ground sage

1/2 tsp. black pepper

1/2 tsp. salt

1/3 c. catsup

2 slices uncooked bacon


Combine all ingredients ( except bacon and catsup) and place in a loaf pan. Zig zag catsup on top and lastly place the bacon slices on very top. Bake at 350 degrees for about an hour.
